- 1 tbsp molasses
- 1 tsp pure vanilla extract

Instructions
- In a medium-sized heavy-bottomed saucepan, combine oats, milk, molasses, and brown sugar.
- Add spices and salt, mixing thoroughly.
- Bring the mixture to a simmer over medium-high heat, stirring frequently.
- Reduce heat to low and let the oatmeal simmer uncovered for 10-15 minutes, stirring occasionally.
- Once creamy, remove from heat and stir in vanilla extract.
- Let rest covered for 2-3 minutes for better consistency.
- Serve the oatmeal in bowls and garnish with chopped pecans and gingerbread cookies.
Notes
