- 300g (about 2 ½ cups) gingerbread cookies, crushed into fine crumbs
- 120g (4 oz or half a block) cream cheese, softened
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground cloves
- 1 tsp vanilla extract
- 250g (8 oz) white chocolate chips or melting wafers for coating
- Optional toppings: festive sprinkles, crushed gingerbread, or a dusting of cinnamon
Instructions
- Pulverize the gingerbread cookies in a food processor until very finely ground.
- In a mixing bowl, combine softened cream cheese, cinnamon, nutmeg, cloves, and vanilla extract until smooth.
- Gradually add the gingerbread cookie crumbs and mix until a thick dough forms.
- Refrigerate the mixture for at least 2–3 hours.
- Prepare your coating station and melt white chocolate chips.
- Scoop and roll the truffle mixture into balls, then dip in melted white chocolate.
- Add optional toppings while the chocolate is still wet.
- Refrigerate again until chocolate sets.

For best flavor, use fresh spices. Let the cream cheese soften before mixing.
