  • 1 cup pumpkin puree
  • 1/2 cup almond flour
  • 1/2 cup gluten-free all-purpose flour
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground ginger

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking pan.
  2. In a large bowl, mix together the pumpkin puree, almond flour, gluten-free flour, maple syrup, melted coconut oil, and vanilla extract until well combined.
  3. In another bowl, whisk together the baking soda, cinnamon, nutmeg, salt, and ground ginger.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
