- 4 cups grated potatoes (about 3–4 medium potatoes, peeled or unpeeled)
- 1 small onion, grated
- 2 large eggs
- 1/3 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1–2 tbsp oil for frying (plus more as needed)
- 1 lb ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp dried thyme
- 1 cup shredded mozzarella cheese
Instructions
- Heat a skillet over medium-high heat, add ground beef, and cook until browned, about 6–8 minutes.
- Add finely chopped onion and minced garlic; cook until onion is soft, about 3–4 minutes.
- Season with salt, black pepper, paprika, and thyme; let cool slightly, then stir in mozzarella.
- Grate potatoes and onion, squeezing out excess moisture.
- In a bowl, mix grated potatoes, onion, eggs, flour, salt, pepper, and garlic powder until combined.
- Heat oil in a skillet over medium heat; form potato mixture into discs, add beef filling, and seal edges.
- Fry each pancake for 3–4 minutes per side until golden and crispy; drain on paper towels.
- Serve warm with sour cream or salsa.
Notes
Squeeze potatoes thoroughly for crispiness. Avoid overcrowding the pan while frying.
