Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1 can chickpeas, drained and rinsed
  • 2 cups fresh spinach
  • 1 cup grape tomatoes, halved
  • 1 lemon (juice and zest)
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Oregano and garlic powder to taste

Instructions

  1. Heat olive oil in a large pan over medium heat. Season the chicken breasts with salt, pepper, oregano, and garlic powder, then add them to the pan. Cook for about 5–7 minutes per side, until they are golden brown and cooked through. Once done, remove the chicken and set it aside.
  2. In the same pan, add the rice and stir for a minute to let it toast lightly. Then pour in the chicken broth, the juice of the lemon, and add in the lemon zest. Bring this mixture to a gentle boil, and then reduce it to a simmer.
  3. Stir in the chickpeas, grape tomatoes, and spinach, mixing everything together well. Now, return the chicken to the pan, placing it right on top of the rice mixture.
  4. Cover the pan and allow everything to cook for about 15 minutes. This will give the rice a chance to absorb the flavorful liquid and make everything tender.
  5. Once the time is up, uncover the pan and sprinkle with the crumbled feta cheese before serving. Dive into your one-pan meal and enjoy the delightful explosion of flavors!
