- For the Skewers:
- 6 oz feta cheese (cut into 1-inch cubes)
- ½ English cucumber (halved lengthwise, sliced into half moons)
- 1 small green bell pepper (cut into 10–12 square pieces)
- 10–12 cherry or grape tomatoes
- 10–12 pitted Kalamata olives
- For the Dressing (Optional but Recommended):
- 1 garlic clove, minced
- Juice of ½ lime
- 1 tbsp red wine vinegar
- 1 tbsp extra virgin olive oil
- 1 tsp dried oregano
- Kosher salt and black pepper to taste
Instructions
- Prepare Skewers: Use 6-inch bamboo skewers. Start threading: one cube of feta, one cucumber slice, one bell pepper piece, one cherry tomato, and finish with one Kalamata olive.
- Make the Vinaigrette: In a small bowl, whisk together garlic, lime juice, vinegar, oregano, salt, and pepper. Drizzle in olive oil while whisking until well combined.
- Assemble and Serve: Arrange skewers on a platter and drizzle with the vinaigrette. Chill for 10–15 minutes before serving for extra flavor.
- Storage: Store in an airtight container in the fridge for up to 3 days. Keep dressing separate until serving if prepping ahead.
Notes
Add fresh mint or parsley for extra herbaceous flavor. Use vegan feta to make it plant-based.
