  • 6 oz feta cheese (cut into 1-inch cubes)
  • ½ English cucumber (halved lengthwise, sliced into half moons)
  • 1 small green bell pepper (cut into 1012 square pieces)
  • 1012 cherry or grape tomatoes
  • 1012 pitted Kalamata olives
  • For the Dressing (Optional but Recommended):
  • 1 garlic clove, minced
  • Juice of ½ lime
  • 1 tbsp red wine vinegar
  • 1 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • Kosher salt and black pepper to taste

Instructions

  1. Prepare Skewers: Use 6-inch bamboo skewers. Start threading: one cube of feta, one cucumber slice, one bell pepper piece, one cherry tomato, and finish with one Kalamata olive.
  2. Make the Vinaigrette: In a small bowl, whisk together garlic, lime juice, vinegar, oregano, salt, and pepper. Drizzle in olive oil while whisking until well combined.
  3. Assemble and Serve: Arrange skewers on a platter and drizzle with the vinaigrette. Chill for 10–15 minutes before serving for extra flavor.
  4. Storage: Store in an airtight container in the fridge for up to 3 days. Keep dressing separate until serving if prepping ahead.

Notes

Add fresh mint or parsley for extra herbaceous flavor. Use vegan feta to make it plant-based.
