- 2 cups broccoli florets
- 2 tablespoons olive oil

- 1 cup cooked rice or quinoa
- 1/2 cup plain Greek yogurt
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon Dijon mustard
Instructions
- Preheat the grill to medium-high heat. Season the chicken breasts with olive oil, salt, and pepper.
- Grill the chicken for 6-7 minutes on each side, or until cooked through.
- Meanwhile, in a pot of boiling water, blanch the broccoli florets for 2-3 minutes until tender-crisp, then drain.
- In a mixing bowl, combine Greek yogurt, minced garlic, lemon juice, and Dijon mustard to create the creamy garlic sauce.
- To assemble the bowls, place the cooked rice or quinoa at the base, add the grilled chicken sliced, top with blanched broccoli, and drizzle with the creamy garlic sauce.
- Serve immediately.
