Ingredients

  • 3 ripe nectarines, halved and pitted
  • 8 oz burrata cheese
  • 2 tablespoons honey
  • 12 fresh mint leaves
  • Cooking spray or light oil
  • Flaky sea salt, like Maldon
  • Optional Additions:
  • Crushed nuts (pistachios, almonds)
  • Balsamic glaze
  • Prosciutto
  • Baby arugula

Instructions

  1. Preheat grill to medium-high heat.
  2. Spray or brush nectarines with light oil.
  3. Grill nectarines cut-side down for 4–5 minutes until tender with visible grill marks.
  4. Drain and slice burrata while nectarines are grilling.
  5. Plate grilled nectarines cut-side up, top with slices of burrata.
  6. Drizzle with honey, garnish with torn mint leaves and a sprinkle of flaky sea salt.
  7. Serve immediately with optional extras like balsamic glaze or prosciutto.

Notes

Use ripe but firm nectarines for best grilling results. Burrata should be cold when sliced so it holds its shape before melting slightly on the warm fruit.
