Description

- 1 lb ground beef (85% lean)
- 1 cup uncooked white rice
- 2 ¼ cups chicken or beef broth (or water + bouillon)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 medium bell pepper, chopped
- ½ cup frozen peas or corn (optional)
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp oregano
- Salt & pepper, to taste
- 1 tbsp olive oil
- Shredded cheese or chopped parsley, for garnish (optional)
Instructions
- Brown the Beef: Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spatula.
- Add Aromatics: Stir in onion and garlic. Cook 3–4 minutes until softened and fragrant.
- Season & Add Veggies: Add bell pepper, frozen vegetables (if using), cumin, paprika, oregano, salt, and pepper. Stir to coat.
- Add Rice & Liquid: Stir in uncooked rice and pour in broth. Bring to a boil.
- Simmer: Reduce heat to low, cover, and cook 18–20 minutes, until rice is tender and liquid absorbed.
- Finish: Fluff with a fork. Top with shredded cheese or parsley if desired. Serve warm.
Notes
Swap rice for quinoa or brown rice (adjust cooking time). Add chili flakes for spice or black beans for extra protein.
