A nutrient-dense bowl with roasted cinnamon-spiced sweet potatoes, seasoned lean ground beef, creamy cottage cheese, avocado, and a drizzle of hot honey.

- 1.5 lbs sweet potatoes, peeled & cubed (~1/4″ pieces)
- 1 lb 93/7 lean ground beef
- 1 tbsp tomato paste
- 1 tbsp taco seasoning (homemade or store-bought)
- 2 cups low-fat (2%) cottage cheese
- 4 small avocados, ripe and sliced
- 2 tbsp hot honey (store-bought or homemade)
- Salt, pepper, cinnamon (to taste)
- Cooking spray or oil for roasting
Instructions
- Preheat Oven: Set oven to 425°F (220°C). Line a sheet pan with parchment paper.
- Roast Sweet Potatoes: Dice sweet potatoes into cubes. Toss with oil spray, salt, pepper, and a light sprinkle of cinnamon. Roast for 30 minutes, flipping halfway. Optionally season again after flipping.
- Cook the Ground Beef: Heat a frying pan over medium-high. Add beef, cook ~5 minutes, breaking into crumbles. Drain fat. Stir in tomato paste, taco seasoning, and a splash of water. Cook 1–2 more minutes.
- Assemble the Bowl: In a bowl, layer roasted sweet potatoes, seasoned beef, a scoop of cottage cheese, and avocado slices. Drizzle generously with hot honey.
Notes
For meal prep, store sweet potatoes, beef, and cottage cheese separately; assemble before eating. Swap cottage cheese for Greek yogurt if preferred.
