Ingredients

  • 1 pound ground chicken
  • 1/2 cup orange juice
  • 1 tablespoon orange zest
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 tablespoon cornstarch
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients: Zest and juice the orange, mince garlic and ginger, and slice green onions.
  2. Cook ground chicken in a skillet over medium heat with a teaspoon of oil until browned and cooked through, about 5-7 minutes.
  3. Make the orange sauce by whisking together orange juice, orange zest, soy sauce, honey, rice vinegar, garlic, and ginger.
  4. Dissolve cornstarch in cold water to make a slurry.
  5. Pour the orange sauce over the cooked chicken, add the cornstarch slurry, and simmer until the sauce thickens.
  6. Adjust seasoning with salt and pepper, stir in the white parts of the green onions, and reserve green parts for garnish.
  7. Serve immediately over rice or in lettuce cups.
