Ingredients

  • 1 pound ground turkey
  • 1 can black beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 8 corn tortillas
  • 1 cup enchilada sauce
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the ground turkey over medium heat until browned. Add the diced onion and minced garlic, cooking until softened.
  3. Stir in the black beans, chili powder, cumin, and paprika. Cook for an additional 2-3 minutes.
  4. Spread a thin layer of enchilada sauce in the bottom of a baking dish.
  5. Fill each tortilla with the turkey mixture, roll them up, and place seam-side down in the dish.
  6. Pour the remaining enchilada sauce over the top and sprinkle with cheese if you are using it.
  7. Bake for 20-25 minutes until the cheese is melted and bubbly.
  8. Garnish with fresh cilantro before serving.

Notes

Serve hot with a side salad or guacamole. Great for leftovers; can be frozen for up to 3 months.
