Description

Lean ground turkey enchiladas baked with black beans, tomatoes, and red enchilada sauce, topped with melted cheese and your favorite garnishes.


Ingredients

  • 1 lb ground turkey (preferably 93% lean)
  • 1 small yellow or white onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeño, seeded and diced (optional for spice)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (14.5 oz) can diced tomatoes
  • 1 (28 oz) can red enchilada sauce
  • 810 flour tortillas (8-inch)
  • 12 cups shredded cheddar or Monterey Jack cheese
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Optional Toppings:

  • Sliced avocado
  • Sour cream or crema fresca
  • Chopped cilantro
  • Diced red onion
  • Lime wedges
  • Shredded lettuce
  • Salsa

Instructions

  1. Preheat Oven: Preheat oven to 400°F (200°C).
  2. Sauté Aromatics: Heat olive oil in a large skillet. Add onion, garlic, jalapeño, salt, and pepper. Sauté for ~5 minutes.
  3. Cook Turkey: Add ground turkey and cook until browned, breaking it up with a spoon.
  4. Combine Flavors: Stir in diced tomatoes, black beans, and seasoning.
  5. Prep Baking Dish: Pour 1 cup enchilada sauce into bottom of a 9×13″ baking dish.
  6. Roll Tortillas: Spoon about ½ cup filling into each tortilla, roll tightly, and place seam side down in dish.
  7. Top with Sauce & Cheese: Pour remaining sauce over tortillas. Sprinkle cheese on top.
  8. Bake: Bake 20–25 minutes until cheese is bubbly and melted.
  9. Serve: Garnish with avocado, sour cream, cilantro, or your favorite toppings.

Notes

Swap turkey for chicken or beef. Use corn tortillas for gluten-free option. Great for freezing before baking.
