Description

A one-pan turkey enchilada casserole made with black beans, corn, peppers, and tortillas simmered in enchilada sauce, topped with melty Pepper Jack cheese and fresh cilantro.


Ingredients

  • 1 lb ground turkey
  • 1 tsp ground cumin, divided
  • 1 tsp dried oregano, divided
  • ½ tsp kosher salt, divided
  • ¼ tsp ground black pepper
  • 3 tsp olive oil, divided
  • ½ yellow onion, chopped
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 2½ cups enchilada sauce (green or red)
  • ¾ cup salsa (mild or spicy)
  • 1 (4 oz.) can diced green chiles (with juice)
  • 1 (14 oz.) can black beans, drained and rinsed
  • ¾ cup corn kernels (fresh, frozen, or canned)
  • ¾ cup cooked brown rice (optional)
  • 4 corn tortillas, cut into strips
  • ¾ cup shredded Pepper Jack cheese
  • 3 tbsp fresh cilantro, minced (for garnish)

Instructions

  1. Brown the Turkey: In a large skillet over medium-high heat, add a bit of oil. Cook ground turkey with ½ tsp cumin, ½ tsp oregano, ¼ tsp salt, and black pepper until browned. Remove and set aside.
  2. Sauté the Aromatics: Add 2 tsp olive oil to skillet. Sauté onion 3–4 minutes until soft. Add bell pepper and cook 1 more minute. Stir in garlic and remaining spices.
  3. Add Wet Ingredients & Veggies: Pour in enchilada sauce, salsa, and green chiles. Stir in black beans, corn, rice (if using), and return turkey to pan. Bring to a boil, then reduce to simmer 10 minutes.
  4. Tortillas & Cheese: Stir in tortilla strips. Top with shredded cheese. Cover skillet until cheese melts, about 1 minute.
  5. Garnish & Serve: Sprinkle with fresh cilantro. Serve warm.

Notes

Use green enchilada sauce for a tangier flavor, or red for a smoky taste. Can substitute ground chicken or beef.
