- 4 large portobello mushroom caps, cleaned and gills removed
- 1 tablespoon olive oil
- 1/2 small onion, finely diced
- 2 garlic cloves, minced
- 1/2 pound ground turkey
- 2 cups fresh spinach, chopped
- Salt and pepper to taste
- 1/2 teaspoon dried oregano or Italian seasoning
- 1/2 cup shredded mozzarella cheese
- Optional: 2 tablespoons grated Parmesan cheese or fresh herbs
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Clean the mushroom caps and brush them with olive oil, placing them gill-side up on the prepared baking sheet.
- In a skillet over medium heat, sauté the diced onion for 2-3 minutes until translucent.
- Add the minced garlic and cook for about 30 seconds until fragrant.
- Add the ground turkey and cook until browned, about 5-7 minutes, seasoning with salt, pepper, and oregano.
- Stir in the chopped spinach and cook until wilted, about 1-2 minutes. Adjust seasoning and let cool slightly.
- Spoon the turkey-spinach mixture into the mushroom caps, mounding slightly.
- Sprinkle mozzarella over each filled cap and, if desired, add Parmesan.
- Bake for 20-25 minutes until the cheese is golden and bubbling, broiling for the last 1-2 minutes for a deeper finish.
- Garnish with fresh herbs and serve hot.
Notes
For best texture, let the filling cool slightly before filling the caps and avoid excess moisture in the mushrooms.
