- 3 medium zucchinis, sliced into rounds (about 1/4-inch thick)
- 1 cup shredded mozzarella
- 1/2 cup grated Parmesan
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup Greek yogurt
- 1 egg, beaten
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish.
- Heat 1 tbsp olive oil in a skillet, add diced onion, and sauté until translucent (4–5 minutes). Add garlic and cook until fragrant (30–60 seconds).
- Add ground turkey, season with Italian seasoning, paprika, salt, and pepper; cook until fully browned (6–8 minutes).
- Slice zucchinis and pat dry to avoid excess moisture.
- In a bowl, whisk together Greek yogurt and egg, then stir in half of the mozzarella and Parmesan.
- Layer turkey, zucchini, and yogurt-cheese mixture in the baking dish; repeat until filled, finishing with yogurt-cheese mixture.
- Top with remaining mozzarella and Parmesan; bake for 30–35 minutes until golden and bubbly.
- Let rest for 10 minutes before slicing and garnish with fresh parsley.
Notes
Ensure to pat the zucchini dry to avoid sogginess in the casserole. This dish can be assembled ahead of time and refrigerated before baking.
