Description
A quick and flavorful ground turkey skillet with bell peppers, onions, garlic, and chipotle seasoning. Perfect for serving over rice, noodles, or in lettuce wraps.

- 1 lb ground turkey (preferably thighs)
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 2–3 tbsp olive oil or sesame oil
- 1 tsp chipotle powder (or chili powder)
- Salt and black pepper, to taste
- Fresh parsley or cilantro, chopped
- Optional: mushrooms, green onions, shredded cheese, soy sauce, or hot sauce
Instructions
- Prep Ingredients: Chop all vegetables, mince garlic, and set seasonings aside.
- Sauté Aromatics: Heat 2 tbsp oil in a skillet over medium-high heat. Add onions and bell peppers, sauté 3–4 minutes. Add garlic and cook for 30 seconds more.
- Brown the Turkey: Push veggies to one side of the skillet. Add more oil if needed, then crumble ground turkey on the empty side. Sprinkle with chipotle powder, salt, and pepper. Cook without stirring for 3–4 minutes, flip, then cook through (7–8 minutes total).
- Combine and Finish: Stir everything together. Adjust seasoning and cook 1 more minute.
- Serve: Garnish with parsley or cilantro. Serve over rice, noodles, in lettuce wraps, or stuffed inside baked potatoes.
Notes
For extra depth, add mushrooms or a splash of soy sauce. Make it spicier with jalapeños or hot sauce.
