Instructions
- Softening the Cream Cheese: Let the cream cheese reach room temperature for at least 1 hour or soften in the microwave on a low setting.
- Creaming the Foundation: Beat softened cream cheese with Greek yogurt for 2-3 minutes until silky and light.
- Incorporating Sweetness and Flavor: Add sweetener, vanilla extract, and pinch of salt. Adjust sweetness to taste.
- Adding the Protein Power: Incorporate vanilla protein powder in 2-3 additions, mixing until thickened into a sticky dough. Adjust texture if needed with milk or oats.
- Preparing the Blueberries: Cook thawed blueberries with water and sweetener until they break down, then cool to make blueberry compote.
- Chilling the Protein Base: Refrigerate the cheesecake-protein mixture for at least 30 minutes to firm up.
- Forming the Bites: Portion chilled mixture, roll into balls, and if sticky, chill further.
- Adding the Blueberry Swirl: Spoon blueberry compote into balls and seal, or create a marbled effect by mixing the compote in.
- Second Chill for Firmness: Refrigerate assembled bites for at least 1 hour to firm them up.
- Optional Coatings: Roll chilled bites in crushed graham cracker crumbs or coconut for extra appeal.
