Description

Delicious blueberry cheesecake-flavored protein bites that pack a punch of protein while being easy to make and perfect for snacking.


Ingredients

  • 1 cup rolled oats (old fashioned or quick cooking, gluten free if needed)
  • 1/2 cup vanilla protein powder (whey, casein, or plant based)
  • 1/4 cup freeze dried blueberries, finely ground
  • 1/4 cup unsweetened applesauce (or mashed banana)
  • 1/4 cup cream cheese, softened (or vegan alternative)
  • 2 tablespoons honey or maple syrup (adjust to taste)
  • 1 tablespoon chia seeds or flax seeds (optional)
  • 1/4 cup frozen blueberries (thawed and drained)
  • 12 tablespoons milk (dairy or non dairy) as needed
  • 2 tablespoons cream cheese, softened
  • 1/2 teaspoon vanilla extract
  • 12 teaspoons powdered sugar (optional)
  • Fresh blueberries

Instructions

  1. Take the cream cheese out of the fridge at least an hour before you start to soften it.
  2. In a large bowl, beat the softened cream cheese with plain non-fat Greek yogurt until smooth and light, about 2-3 minutes.
  3. Add your sweetener, vanilla extract, a little lemon zest, and a pinch of salt. Beat until well combined.
  4. Add the vanilla protein powder in two small batches and mix on low until just combined.
  5. In a small saucepan, combine fresh or frozen blueberries with a splash of water and sweetener. Heat to coax juices out.
  6. Bring to a gentle simmer on medium low for about 5-7 minutes until many berries burst and the liquid thickens slightly. Remove from heat and cool completely.
  7. Cover the bowl with the cheesecake base and refrigerate for at least 30 minutes.
  8. Scoop portions with a small scoop or tablespoon and roll into balls.
  9. Flatten each ball slightly, add a dollop of blueberry swirl, fold edges over to seal, and re-roll.
  10. Refrigerate the tray for at least 1 hour until fully firm.
  11. Optionally, roll the bites in crushed graham cracker crumbs or shredded coconut before serving.

Notes

Store in an airtight container in the fridge for up to 5-7 days. Freeze in a single layer for up to 1-2 months.
