Delicious blueberry cheesecake-flavored protein bites that pack a punch of protein while being easy to make and perfect for snacking.
Ingredients

- 1 cup rolled oats (old fashioned or quick cooking, gluten free if needed)
- 1/2 cup vanilla protein powder (whey, casein, or plant based)
- 1/4 cup freeze dried blueberries, finely ground
- 1/4 cup unsweetened applesauce (or mashed banana)
- 1/4 cup cream cheese, softened (or vegan alternative)
- 2 tablespoons honey or maple syrup (adjust to taste)
- 1 tablespoon chia seeds or flax seeds (optional)
- 1/4 cup frozen blueberries (thawed and drained)
- 1–2 tablespoons milk (dairy or non dairy) as needed
- 2 tablespoons cream cheese, softened
- 1/2 teaspoon vanilla extract
- 1–2 teaspoons powdered sugar (optional)

Instructions
- Take the cream cheese out of the fridge at least an hour before you start to soften it.
- In a large bowl, beat the softened cream cheese with plain non-fat Greek yogurt until smooth and light, about 2-3 minutes.
- Add your sweetener, vanilla extract, a little lemon zest, and a pinch of salt. Beat until well combined.
- Add the vanilla protein powder in two small batches and mix on low until just combined.
- In a small saucepan, combine fresh or frozen blueberries with a splash of water and sweetener. Heat to coax juices out.
- Bring to a gentle simmer on medium low for about 5-7 minutes until many berries burst and the liquid thickens slightly. Remove from heat and cool completely.
- Cover the bowl with the cheesecake base and refrigerate for at least 30 minutes.
- Scoop portions with a small scoop or tablespoon and roll into balls.
- Flatten each ball slightly, add a dollop of blueberry swirl, fold edges over to seal, and re-roll.
- Refrigerate the tray for at least 1 hour until fully firm.
- Optionally, roll the bites in crushed graham cracker crumbs or shredded coconut before serving.
Notes
Store in an airtight container in the fridge for up to 5-7 days. Freeze in a single layer for up to 1-2 months.
