Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar (or brown sugar)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup crushed pineapple (well-drained)
  • 1/2 cup shredded coconut (sweetened or unsweetened)
  • 1/2 cup chopped macadamia nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the bananas in a large mixing bowl until smooth.
  3. Mix in the melted butter thoroughly.
  4. Stir in baking soda and a pinch of salt.
  5. Add sugar and mix well.
  6. Beat the egg in a separate bowl; add to the mixture along with vanilla extract.
  7. Gently fold in the flour until just combined.
  8. Add crushed pineapple, shredded coconut, and macadamia nuts, folding gently.
  9. Grease a 9×5 inch loaf pan and pour in the batter, smoothing the top.
  10. Bake for 60 to 70 minutes, checking for doneness with a toothpick.
  11. Let cool for about 10 minutes, then turn out onto a wire rack.

Notes

For best flavor, use very ripe bananas with brown spots. You can also customize the recipe with different nuts or tropical fruits.
