- 3 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar (or brown sugar)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup crushed pineapple (well-drained)
- 1/2 cup shredded coconut (sweetened or unsweetened)
- 1/2 cup chopped macadamia nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Mash the bananas in a large mixing bowl until smooth.
- Mix in the melted butter thoroughly.
- Stir in baking soda and a pinch of salt.
- Add sugar and mix well.
- Beat the egg in a separate bowl; add to the mixture along with vanilla extract.
- Gently fold in the flour until just combined.
- Add crushed pineapple, shredded coconut, and macadamia nuts, folding gently.
- Grease a 9×5 inch loaf pan and pour in the batter, smoothing the top.
- Bake for 60 to 70 minutes, checking for doneness with a toothpick.
- Let cool for about 10 minutes, then turn out onto a wire rack.
Notes
For best flavor, use very ripe bananas with brown spots. You can also customize the recipe with different nuts or tropical fruits.
