- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the rolled oats, diced apples, flour, cinnamon, baking soda, and salt until combined.
- In another bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir until fully combined.
- Drop spoonfuls of the mixture onto a lined baking sheet, spacing them out evenly.
- Bake for 12-15 minutes, or until golden brown.
- Cool on the baking sheet for a few minutes before transferring to a cooling rack.
Notes
For a chewier texture, increase rolled oats or add more coconut oil. Enjoy them fresh or store them in an airtight container.
