Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add diced onions and minced garlic, sautéing until fragrant.
- Add diced chicken to the skillet and cook until golden brown (about 5-7 minutes).
- Fold in mixed vegetables and riced cauliflower, cooking for an additional 5 minutes.
- Pour in chicken broth and season with salt, pepper, and dried herbs. Stir well.
- Transfer the mixture to a greased casserole dish. Top with shredded cheese.
- Bake for 25-30 minutes until the cheese is melted and bubbly.
- Let cool slightly before serving warm.
Notes
For extra creaminess, consider adding Greek yogurt. Swap chicken for turkey or use chickpeas for a vegan version.
