Ingredients

- 1 lb chicken breast
- 1 cup quinoa (rinsed)
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Place the chicken breast at the bottom of the crockpot.
- Rinse the quinoa and add it to the crockpot.
- Add the black beans, corn, diced tomatoes, onion, and garlic.
- Pour in the chicken broth and add chili powder, cumin, salt, and pepper.
- Stir to combine.
- Cover and cook on low for 6–8 hours or on high for 3–4 hours.
- Before serving, shred the chicken in the pot and mix everything together. Serve hot.
Notes
Use rinsed quinoa to improve flavor and texture. Adjust seasoning near the end of cooking as quinoa absorbs salt and spices. Shred the chicken while warm for easier mixing.
