A set-it-and-forget-it crockpot recipe combining juicy chicken with fajita-style flavors for colorful, protein-packed bowls.

- 2 lbs boneless, skinless chicken breasts
- 1 bell pepper (any color), sliced
- 1 red onion, sliced
- 2 cups corn (frozen or fresh)
- 1 can black beans, drained and rinsed
- 1 packet fajita seasoning
- 1 cup chicken broth or water
- Salt and pepper to taste
- Cooked rice or quinoa for serving
- Optional toppings: avocado, cilantro, lime juice, cheese
Instructions
- In the crockpot, place the chicken breasts at the bottom.
- Add the sliced bell pepper, red onion, corn, and black beans on top of the chicken.
- Sprinkle the fajita seasoning over the ingredients.
- Pour the chicken broth or water into the crockpot.
- Season with salt and pepper to taste.
- Cover and cook on low for 360 minutes (6 hours) or high for 240 minutes (4 hours) until the chicken is cooked through.
- Shred the chicken with two forks and mix everything together.
- Serve over cooked rice or quinoa and add optional toppings as desired.
Notes
For best results, slice all vegetables evenly, layer chicken strategically, and adjust seasoning after cooking. Store in airtight containers for up to 3–4 days in the refrigerator.
