Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup quinoa, rinsed
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup corn, frozen or fresh
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a crockpot, add the chicken breasts, quinoa, black beans, kidney beans, diced tomatoes, corn, onion, garlic, chicken broth, chili powder, cumin, salt, and pepper.
  2. Stir the ingredients together until well mixed.
  3. Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through.
  4. Once cooked, remove the chicken breasts and shred them with two forks.
  5. Return the shredded chicken to the crockpot and stir to combine.
  6. Serve warm and enjoy!
