- 1/4 cup vegetable oil
- 1 egg
- 2 teaspoons vanilla essence
- 1 2/3 cups whole wheat flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, whisk together pumpkin puree, maple syrup or honey, Greek yogurt, vegetable oil, egg, and vanilla essence.
- In a separate bowl, mix together whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
- Gently add dry ingredients to the wet ingredients and mix until just combined.
- Line a muffin tin with paper liners or spray with cooking spray. Fill each cup about two-thirds full.
- Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
- Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
