- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can tomato sauce
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 1 cup orzo pasta
- 2 cups chicken broth
- 1/2 cup grated Parmesan cheese, plus more for serving
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground turkey, cooking until browned for 7-9 minutes. Season with salt and pepper. Set aside.
- In the same skillet, add onion, garlic, and bell pepper; sauté for 5-7 minutes until softened. Stir in oregano, basil, and red pepper flakes. Add diced tomatoes and tomato sauce; combine well.
- Pour in chicken broth and bring to a simmer. Stir in orzo, ensuring it’s submerged. Cover and simmer for 10-12 minutes until orzo is al dente.
- Remove from heat; stir in browned turkey and Parmesan cheese. Adjust seasoning with salt and pepper. Serve garnished with parsley and extra Parmesan.
Notes
For meal prep, portion into containers and refrigerate. For freezing, undercook orzo slightly before freezing for best results when reheating.
