Description

A hearty and wholesome cake made with rolled oats and fresh apples, perfect for breakfast, a snack, or a light dessert.

Ingredients

Scale
  • 2 cups rolled oats
  • 2 medium apples, peeled and diced
  • 1/2 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1/2 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
  2. In a large bowl, combine the rolled oats, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix the applesauce, honey (or maple syrup), milk, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples and nuts if using.
  5. Spread the mixture evenly in the prepared baking dish.
  6. Bake for 25-30 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
  7. Allow to cool for a few minutes before slicing. Enjoy your healthy treat!

Notes

For a moister cake, ensure not to overbake. Use fresh, ripe apples for the best flavor.
