Ingredients
- ½ cup coconut oil or butter, melted
- 1 1/3 cups gluten-free all-purpose flour
- 1 cup gluten-free rolled oats
- ¼ cup pure maple syrup
- Pinch sea salt
- 3 large ripe Bosc pears, sliced
- ¼ cup water
- 2 Tbsp pure maple syrup
- ½ tsp ground cinnamon
- Pinch ground nutmeg (optional)
- 1 Tbsp gluten-free all-purpose flour
- 1 cup powdered sugar
- 2 Tbsp water or lemon juice

Instructions
- Preheat your oven to 375°F (190°C) and line a 9×13-inch baking pan with parchment paper.
- In a large bowl, combine 1 1/3 cups gluten-free flour, 1 cup oats, ¼ cup maple syrup, and a pinch of salt. Mix well.
- Add ½ cup melted coconut oil or butter to the dry mix and blend until the mixture resembles coarse crumbs.
- Press about two-thirds of the crumb mixture into the bottom of the lined baking pan.
- Peel, core, and dice the pears into ½-inch pieces and toss them in a bowl.
- Add 2 tablespoons maple syrup, ¼ cup water, ½ teaspoon cinnamon, and optional nutmeg to the pears and stir.
- Sprinkle 1 tablespoon gluten-free flour over the pears and mix again.
- Spoon the pear mixture evenly over the crumb base.
- Sprinkle the remaining crumb mixture on top of the pears.
- Bake for 35 to 45 minutes until golden brown.
- Cool in the pan, then lift out using parchment paper and slice into bars.
- For an optional glaze, whisk together 1 cup powdered sugar with 2 tablespoons water or lemon juice and drizzle over cooled bars.
- Store in an airtight container at room temperature or refrigerate for longer freshness.
