- 1 cup pumpkin puree
- 1 cup oats
- 1/2 cup almond flour
- 1/4 cup maple syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon vanilla extract
- 1/2 cup dark chocolate chips
- 1 tablespoon coconut oil
Instructions
- In a mixing bowl, combine pumpkin puree, oats, almond flour, maple syrup, cinnamon, nutmeg, and vanilla extract. Mix until well combined.
- Chill the mixture for 30 minutes in the refrigerator.
- Once chilled, scoop out small amounts of the mixture and roll into balls.
- Melt the dark chocolate chips and coconut oil in a microwave or double boiler until smooth.
- Dip each pumpkin ball into the melted chocolate, ensuring it’s fully coated.
- Place the truffles on parchment paper and refrigerate until the chocolate hardens.

Notes
For added appeal, sprinkle crushed nuts or coconut flakes on top before serving. Store in an airtight container in the refrigerator for up to one week.
