Ingredients

  • 2 lbs chicken thighs or breasts
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 4 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a bowl, whisk together honey, soy sauce, minced garlic, olive oil, apple cider vinegar, ground ginger, salt, and pepper.
  2. Place the chicken in the slow cooker and pour the honey garlic mixture over the top.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken is cooked through and tender.
  4. Once done, shred the chicken with two forks and stir well in the sauce.
  5. Serve garnished with chopped green onions.

Notes

Use chicken thighs for moisture; for less sweetness, reduce honey. To thicken sauce, mix some liquid with cornstarch and cook uncovered for 15-20 minutes.
