Hearty Black Bean Squash Stew

Description

A cozy and colorful stew packed with plant protein and fiber, perfect for a warm dinner with easy leftovers.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups vegetable broth
  • 1 (15 ounce) can black beans, rinsed and drained
  • 2 cups cubed butternut squash (or sweet potato), peeled
  • Salt and black pepper to taste
  • Fresh thyme sprigs, for garnish

Instructions

  1. Peel and cube the butternut squash into 1/2-inch pieces. Dice the onion and bell peppers. Mince the garlic. Rinse and drain the black beans.
  2. Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté until translucent, about 7 to 10 minutes.
  3. Add the diced bell peppers and continue to sauté for 5 to 7 minutes until slightly softened.
  4. Stir in the minced garlic, ground cumin, chili powder, smoked paprika, and dried oregano. Cook for 1 minute until fragrant, stirring constantly.
  5. Add the cubed butternut squash, diced tomatoes undrained, and vegetable broth to the pot. Bring to a gentle boil, then reduce heat to low, cover, and simmer for 20 to 25 minutes until the squash is tender.
  6. Stir in the rinsed and drained black beans. Continue to simmer, uncovered, for another 5 to 10 minutes.
  7. Remove the stew from heat. Season generously with salt and black pepper to taste.
  8. Ladle the hot stew into bowls, garnish with fresh thyme sprigs, and serve warm.

Notes

Great paired with tortillas, rice, or bread. Can be modified with different beans or squash.
