Ingredients

  • 4 bell peppers
  • 1 cup ricotta cheese
  • 1/2 cup grated parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix together the ricotta, parmesan, basil, parsley, garlic, salt, and pepper.
  4. Stuff each pepper with the ricotta mixture until they are full.
  5. Place the stuffed peppers upright in a baking dish and drizzle with olive oil.
  6. Bake for 30-35 minutes, or until the peppers are tender and the filling is heated through.
  7. Serve warm as a delicious side dish.
