Ingredients

- 4 bell peppers
- 1 cup ricotta cheese
- 1/2 cup grated parmesan cheese
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix together the ricotta, parmesan, basil, parsley, garlic, salt, and pepper.
- Stuff each pepper with the ricotta mixture until they are full.
- Place the stuffed peppers upright in a baking dish and drizzle with olive oil.
- Bake for 30-35 minutes, or until the peppers are tender and the filling is heated through.
- Serve warm as a delicious side dish.
Notes
For a spicier kick, add red pepper flakes to the cheese mixture.
