- 6 large eggs

- 1 pound cooked and crumbled turkey sausage
- 1 cup chopped spinach
- 1 cup diced bell peppers
- 1/2 cup diced onion
- 1 cup shredded cheese (cheddar or mozzarella)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine cottage cheese and eggs. Season with salt and pepper.
- Fold in the turkey sausage, spinach, bell peppers, and onion.
- Add half of the shredded cheese and mix well.
- Pour the mixture into a greased 9×13 inch baking dish.
- Top with remaining shredded cheese.
- Bake for 30 to 35 minutes until set and golden brown.
- Let cool slightly before slicing and serving.
