  • 15 ounces diced tomatoes, with juices
  • 1 cup low-sodium beef broth
  • ½ cup plain Greek yogurt
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Bring a pot of salted water to boil; cook penne pasta until al dente, then drain.
  2. In a large skillet, heat olive oil over medium heat; add onion and garlic, sauté until fragrant.
  3. Add the ground beef, cook until browned, about 5-7 minutes.
  4. Stir in diced tomatoes, beef broth, Greek yogurt, and Parmesan cheese, seasoning with Italian seasoning, salt, and pepper; simmer for a few minutes.
