- 2 cloves garlic, minced
- 1 pound lean ground beef
- 15 ounces diced tomatoes, with juices
- 1 cup low-sodium beef broth
- ½ cup plain Greek yogurt
- ¼ cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Bring a pot of salted water to boil; cook penne pasta until al dente, then drain.
- In a large skillet, heat olive oil over medium heat; add onion and garlic, sauté until fragrant.
- Add the ground beef, cook until browned, about 5-7 minutes.
- Stir in diced tomatoes, beef broth, Greek yogurt, and Parmesan cheese, seasoning with Italian seasoning, salt, and pepper; simmer for a few minutes.
- Toss the cooked pasta with the creamy beef sauce until well-coated.
- Garnish and serve immediately.
