Ingredients

  • 2 lbs boneless, skinless chicken breasts, cut into 1 -inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 lbs Yukon Gold potatoes, peeled and cut into ½ -inch cubes
  • 3 tablespoons unsalted butter
  • 8 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk, warmed
  • 1 cup chicken broth
  • 4 oz cream cheese, softened and cubed
  • 1 cup shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese
  • ½ teaspoon dried thyme
  • ¼ teaspoon red pepper flakes (optional)
  • ¼ cup fresh parsley, chopped

Instructions

  1. Pat dry and cube chicken breasts, toss with olive oil, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper. Set aside.
  2. Peel and cube Yukon Gold potatoes, rinse, and toss with olive oil, salt, and pepper.
  3. Mince garlic and set aside.
  4. Warm milk in a saucepan over low heat and prepare the cream cheese, cheddar, and Parmesan.
  5. Heat olive oil in a skillet and sear chicken until golden. Remove and keep warm.
  6. Skillet Sauté Method: In the same skillet, sauté potatoes until softened or Par-Boil Method: boil potatoes until just tender. Drain.
  7. Melt unsalted butter in the skillet, add minced garlic and sauté until fragrant.
  8. Sprinkle flour, whisk to form a roux for 1-2 minutes.
  9. Gradually whisk in warm milk and chicken broth until smooth and bubbling.
  10. Add cream cheese, cheddar, and Parmesan, stirring until melted.
  11. Season with thyme and red pepper flakes. Adjust seasoning to taste.
  12. Add chicken and potatoes to the sauce; stir until coated.
  13. Simmer for 10-15 minutes until chicken is cooked through and potatoes are fork-tender.
  14. Garnish with parsley. Serve hot and enjoy.
