- 1 lb (450g) lean ground turkey or chicken
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon cumin
- Taco seasoning to taste
- Salt and pepper to taste
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (10 oz) green chilies, undrained (optional)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup low-sodium chicken broth
- 8 oz cream cheese, cubed and softened
- 1 cup shredded cheddar cheese
Instructions
- Heat olive oil in a large pot and brown the ground turkey or chicken.
- Once browned, stir in garlic powder, onion powder, cumin, taco seasoning, salt and pepper. Cook for one more minute.
- Add diced tomatoes, green chilies, and black beans. Stir well.
- Pour in chicken broth and bring to a gentle simmer.
- Add cream cheese and stir until melted and fully incorporated.
- Mix in cheddar cheese until melted and smooth.
- Simmer for an additional 5-10 minutes. Adjust seasoning if necessary.
- Ladle into bowls and serve immediately, garnished with optional toppings.
