Ingredients

  • 12 large eggs
  • 1 cup milk
  • 2 cups chopped spinach
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 2 cups cooked and crumbled turkey sausage or bacon
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping spinach, dicing bell peppers and onions, and cooking the turkey sausage or bacon.
  2. In a large bowl, whisk together the eggs and milk until combined and slightly frothy. Season with salt and pepper.
  3. Stir in the spinach, bell peppers, onions, turkey sausage, and cheese until evenly mixed.
  4. Grease the crockpot with cooking spray and pour the egg mixture in, spreading it evenly.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the eggs are set.
