Ingredients

  • 1 pound ground turkey or chicken
  • 1 onion, finely diced
  • 1 bell pepper, finely diced
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 2 cups chicken or vegetable broth

Instructions

  1. Brown the meat in a large pot over medium heat for 5-7 minutes.
  2. Add the onion, bell pepper, and garlic and sauté for 5 minutes.
  3. Stir in chili powder, cumin, salt, and pepper.
  4. Add kidney beans, black beans, diced tomatoes, and broth to the pot.
  5. Bring to a rolling boil, then reduce heat and simmer for 20-30 minutes.
  6. Serve hot, garnished as desired.
