- 2 large boneless, skinless chicken breasts (about 1 lb), cooked and shredded
- 3 cups fresh baby spinach
- 1 can (14 oz) artichoke hearts, drained and chopped
- 1 cup non-fat Greek yogurt
- 1/2 cup light cream cheese, softened
- 3/4 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- Preheat oven to 350°F (175°C).
- Grease a 9×13 inch baking dish.
- In a large bowl, mix chicken, spinach, artichokes, Greek yogurt, cream cheese, mozzarella, Parmesan, garlic, salt, and pepper until combined.
- Spread mixture in the prepared baking dish.
- Bake for 30-35 minutes until golden and bubbly.
- Let cool for 5-10 minutes before serving.
