A simple and cozy hobo casserole made with ground beef, potatoes, and plenty of cheese, perfect for a comforting meal any day of the week.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 medium potatoes, thinly sliced
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 teaspoon paprika (optional)
  • 1 tablespoon butter, melted

Instructions

  1. Prep your veggies: Peel and thinly slice the potatoes and chop the onion.
  2. Brown the ground beef: In a large skillet over medium-high heat, cook the ground beef until browned, about 5-7 minutes.
  3. Drain excess fat: Tilt the skillet and drain off any excess fat from the beef.
  4. Sauté the onion: Add the chopped onion to the skillet with the beef and cook until translucent, about 5-7 minutes.
  5. Add seasonings: Stir in salt, pepper, garlic powder, and onion powder, cooking for another minute.
  6. Combine soup and milk: In a bowl, whisk together the cream of mushroom soup and milk until smooth.
  7. Stir in the potatoes: Add thinly sliced potatoes to the skillet and stir to combine.
  8. Introduce the creamy sauce: Pour the soup mixture over the beef and potatoes. Stir well.
  9. Add some cheese to the mix: Stir in 1 cup of the cheddar cheese.
  10. Prepare for baking: Preheat your oven to 375°F (190°C) and grease a baking dish.
  11. Transfer to baking dish: Pour the mixture into the baking dish and spread evenly.
  12. Top with more cheese: Sprinkle the remaining cheddar cheese on top.
  13. Optional butter and paprika topping: Drizzle melted butter over the cheese and sprinkle with paprika if desired.
  14. Initial bake covered: Cover with aluminum foil and bake for 30 minutes.
  15. Second bake uncovered: Remove foil and bake for an additional 20-30 minutes until potatoes are tender and cheese is bubbly and golden.
  16. Rest and serve: Let it rest for 10-15 minutes before serving.

Notes

You can swap ground beef for turkey or chicken, add veggies for extra nutrition, or change the cheese for a different flavor profile.
