- 1 lb lean ground beef
- ½ cup diced yellow onion
- 2 garlic cloves, minced
- 2 tbsp all-purpose flour
- 1 cup beef broth (low-sodium optional)
- 1 tbsp dried minced onion flakes
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp Worcestershire sauce
- Salt and pepper, to taste
- 3 cups shredded cheddar cheese, divided
- 1 cup sour cream (or plain Greek yogurt or Cream of Chicken Soup)
- 3 cups diced russet potatoes
- 1 cup diced carrots
- Optional: dried parsley for garnish
Instructions
- Preheat Oven: Preheat oven to 400°F (200°C).
- Cook Beef: In a large skillet, sauté ground beef, onion, and garlic over medium heat for 5–7 minutes until beef is no longer pink.
- Add Flour & Broth: Stir in flour and cook for 1 minute. Add beef broth, onion flakes, onion powder, garlic powder, Worcestershire sauce, salt, and pepper. Cook for another minute until slightly thickened.
- Make Filling: Stir in 1 cup cheddar cheese and sour cream until creamy and smooth.
- Assemble Casserole: Transfer mixture into a 9×13 baking dish. Mix in diced potatoes and carrots until evenly combined.
- Top & Bake: Sprinkle remaining 2 cups cheese on top. Cover with foil and bake 30–35 minutes, or until potatoes are fork-tender.
- Serve: Garnish with dried parsley if desired. Serve warm.
Notes
Swap beef with ground turkey or chicken for a lighter version. Add peas or green beans for extra veggies.
