Description

Ingredients

  • 1 lb lean ground beef
  • ½ cup diced yellow onion
  • 2 garlic cloves, minced
  • 2 tbsp all-purpose flour
  • 1 cup beef broth (low-sodium optional)
  • 1 tbsp dried minced onion flakes
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp Worcestershire sauce
  • Salt and pepper, to taste
  • 3 cups shredded cheddar cheese, divided
  • 1 cup sour cream (or plain Greek yogurt or Cream of Chicken Soup)
  • 3 cups diced russet potatoes
  • 1 cup diced carrots
  • Optional: dried parsley for garnish

Instructions

  1. Preheat Oven: Preheat oven to 400°F (200°C).
  2. Cook Beef: In a large skillet, sauté ground beef, onion, and garlic over medium heat for 5–7 minutes until beef is no longer pink.
  3. Add Flour & Broth: Stir in flour and cook for 1 minute. Add beef broth, onion flakes, onion powder, garlic powder, Worcestershire sauce, salt, and pepper. Cook for another minute until slightly thickened.
  4. Make Filling: Stir in 1 cup cheddar cheese and sour cream until creamy and smooth.
  5. Assemble Casserole: Transfer mixture into a 9×13 baking dish. Mix in diced potatoes and carrots until evenly combined.
  6. Top & Bake: Sprinkle remaining 2 cups cheese on top. Cover with foil and bake 30–35 minutes, or until potatoes are fork-tender.
  7. Serve: Garnish with dried parsley if desired. Serve warm.

Notes

Swap beef with ground turkey or chicken for a lighter version. Add peas or green beans for extra veggies.
