Ingredients

  • 1 1/4 cups vegetable broth
  • 1/2 cup dried cranberries
  • 1/2 cup dried apricots, chopped
  • 1/4 cup pine nuts, toasted
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a saucepan, bring vegetable broth to a boil. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  2. In a large bowl, combine the couscous, dried cranberries, chopped dried apricots, and toasted pine nuts.
  3. In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the couscous mixture and toss to combine.
  5. Stir in chopped parsley.
  6. Serve chilled or at room temperature.

Notes

This salad tastes even better when made ahead of time. Keep an eye on the pine nuts while toasting to prevent burning.
