Ingredients
2 cups red cabbage, shredded
1 apple, cored and diced
1 cup cranberries (fresh or dried)
1/4 cup carrots, shredded
1/4 cup walnuts, chopped (optional)
1/4 cup mayonnaise (or yogurt for a lighter version)
1 tablespoon apple cider vinegar
1 tablespoon honey (or sugar, optional)

Instructions
In a large bowl, combine the red cabbage, diced apple, cranberries, carrots, and walnuts. Toss gently so nothing gets bruised.
In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey or sugar, and salt and pepper. Taste the dressing and adjust for tang or sweetness.
Pour the dressing over the slaw and toss to combine, ensuring a light coating.
Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
