Ingredients

  • 9 cups fresh apples (peeled, cored, and chopped into uniform sizes)
  • 2 tablespoons lemon juice
  • 3 cups white sugar
  • 2 tablespoons brown sugar
  • 1/2 cup cornstarch
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon coarse sea salt

Instructions

  1. In a large bowl, toss the peeled, cored, and chopped apples with the lemon juice.
  2. In a Dutch oven or saucepan, combine the white sugar, brown sugar, cornstarch, ground cinnamon, ground nutmeg, and coarse sea salt. Mix well.
  3. Add 4 cups of water to the dry mixture and bring to a low simmer over medium heat.
  4. Gently stir in the prepared apples and cover the pot, letting it cook for 6-10 minutes.
  5. Remove from heat and let the filling cool completely before canning or freezing.
