- 9 cups fresh apples (peeled, cored, and chopped into uniform sizes)
- 2 tablespoons lemon juice
- 3 cups white sugar
- 2 tablespoons brown sugar
- 1/2 cup cornstarch
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon coarse sea salt
Instructions
- In a large bowl, toss the peeled, cored, and chopped apples with the lemon juice.
- In a Dutch oven or saucepan, combine the white sugar, brown sugar, cornstarch, ground cinnamon, ground nutmeg, and coarse sea salt. Mix well.
- Add 4 cups of water to the dry mixture and bring to a low simmer over medium heat.
- Gently stir in the prepared apples and cover the pot, letting it cook for 6-10 minutes.
- Remove from heat and let the filling cool completely before canning or freezing.
Notes
For best flavor, use a mix of tart and sweet apples. Adjust the sugar based on the sweetness of the apples.
