- 12 tablespoons very cold unsalted butter, diced
- ½ cup very cold heavy cream
- 2 large eggs, divided
- 2 cups all-purpose flour, plus more for rolling out scones
- ¼ cup granulated sugar
- 1 tablespoon baking powder
- 1 tablespoon chai spice blend
- ½ teaspoon kosher salt
- 1 heaping cup powdered sugar
- 2 teaspoons chai spice blend
- 1 teaspoon vanilla extract
- 3 tablespoons heavy cream
- 1 tablespoon maple syrup
- Pinch of kosher salt
Instructions
- Prepare the heavy cream, whisk in 1 egg and the yolk, and chill.
- Mix flour, sugar, baking powder, chai spice, and salt in a food processor.
- Add cold butter and pulse until the mixture resembles fluffy parmesan cheese.
- Slowly add the chilled cream and egg mixture, pulsing until a ball of dough forms.
- Transfer the dough to a floured surface, shape into a disc, wrap in plastic, and freeze for 30 minutes.
- Roll out dough and cut into wedges or triangles.
- Preheat oven to 375°F, place scones on a baking sheet, and brush with egg wash.
- Bake for 20-22 minutes until golden brown.
- Mix glaze ingredients until thick and dip scones in glaze once cool.
- Let the glaze set for 10 minutes before serving.
Notes
Store leftovers in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
