Description

Delightful scones combining chai spices with a sweet maple glaze, perfect for breakfast or an afternoon snack.


Ingredients

  • 12 tablespoons very cold unsalted butter, diced
  • ½ cup very cold heavy cream
  • 2 large eggs, divided
  • 2 cups all-purpose flour, plus more for rolling out scones
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • ½ teaspoon kosher salt
  • 1 heaping cup powdered sugar
  • 2 teaspoons chai spice blend
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream
  • 1 tablespoon maple syrup
  • Pinch of kosher salt

Instructions

  1. Prepare the heavy cream, whisk in 1 egg and the yolk, and chill.
  2. Mix flour, sugar, baking powder, chai spice, and salt in a food processor.
  3. Add cold butter and pulse until the mixture resembles fluffy parmesan cheese.
  4. Slowly add the chilled cream and egg mixture, pulsing until a ball of dough forms.
  5. Transfer the dough to a floured surface, shape into a disc, wrap in plastic, and freeze for 30 minutes.
  6. Roll out dough and cut into wedges or triangles.
  7. Preheat oven to 375°F, place scones on a baking sheet, and brush with egg wash.
  8. Bake for 20-22 minutes until golden brown.
  9. Mix glaze ingredients until thick and dip scones in glaze once cool.
  10. Let the glaze set for 10 minutes before serving.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
