Description

A warm and comforting German potato soup packed with flavors from fresh vegetables and creamy goodness.


Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 2 carrots, diced
  • 2 celery sticks, chopped
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 cup dairy-free cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (like parsley or chives) for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery, and sauté until soft.
  2. Add diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  3. Use an immersion blender to blend the soup until smooth and creamy, or leave it chunkier by blending only half.
  4. Stir in dairy-free cream, season with salt and pepper to taste, and heat through.
  5. Serve hot, garnished with fresh herbs.

Notes

For added flavor, sauté minced garlic with the vegetables, and feel free to adjust thickness by blending more or less as per preference.
