A warm and comforting German potato soup packed with flavors from fresh vegetables and creamy goodness.
Ingredients

- 4 large potatoes, peeled and diced
- 2 carrots, diced
- 2 celery sticks, chopped
- 1 onion, chopped
- 4 cups vegetable broth
- 1 cup dairy-free cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (like parsley or chives) for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery, and sauté until soft.
- Add diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Use an immersion blender to blend the soup until smooth and creamy, or leave it chunkier by blending only half.
- Stir in dairy-free cream, season with salt and pepper to taste, and heat through.
- Serve hot, garnished with fresh herbs.
Notes
For added flavor, sauté minced garlic with the vegetables, and feel free to adjust thickness by blending more or less as per preference.
