Description

A simple and customizable recipe for making homemade jerky, perfect for snacking on road trips, hiking, or at home.


Ingredients

Scale
  • 2 pounds of beef or venison
  • 1/4 cup soy sauce
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon smoked salt
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Slice the meat into thin strips against the grain.
  2. In a bowl, mix all the ingredients together to create the marinade.
  3. Add the meat to the marinade and mix well to coat. Marinate for at least 4 hours, preferably overnight.
  4. Preheat your dehydrator or oven to 160°F (70°C).
  5. Arrange the marinated meat strips in a single layer on the dehydrator trays or a baking sheet.
  6. Dehydrate for about 6-8 hours in the dehydrator or bake for 4-6 hours in the oven, flipping halfway through, until the jerky is dry and firm.
  7. Allow to cool before storing in an airtight container.

Notes

Slice the meat thinly and against the grain for a more tender jerky. Adjust the spices in the marinade to match your taste. Monitor your dehydrator or oven to prevent over-drying.
